Gose is a beer style that originated from Goslar in Germany. As a result of rich salt deposits around the area, the brewing water carries a higher than normal salinity. Traditionally, the beer is spontaneously fermented with wild yeasts and bacteria in the brewing environment, lending the beer its unique tartness.
Nowadays, Gose is brewed around the world. Very often, it is kettle-soured by the bacteria lactobacillus (the same bacteria you’d find in yogurt!), fermented with brewer’s yeast, and additions of salt and sometimes even spices or fruits.
Dominant flavours in Gose include a lemony tartness, mouth-watering saltiness, and a refreshing finish.
