Bee Hive Wild Ale

ABV: 7.7% | IBU: 15 | VOL: 750ml

brewed to bee wild, a collaboration with our good friends at 香港原蜜 Hong Kong Raw Honey, is our maiden effort to harvest wild culture from beehives to produce something unique. Pouring an elegant light orange, our beehive wild ale emits prominent notes of tropical fruits such as guava and longan with delicate floral and zesty flavours, accompanied by a barnyard funkiness. The beer is perfectly balanced by the pleasant mouth-watering sourness and gentle bitterness from the raw honey, with refined oak character from the French oak barrels. The medium-low body accompanied by soft carbonation culminates to a graceful finish.

All Jus’d Up

Farmhouse Ale – Saison

ABV: 6.9% | IBU: 20 | VOL: 750ml

A collaboration with our good friends at Neonotic Cidery, all jus’d up is a saison base beer with mandarin added for secondary fermentation together with champagne yeast typically used in cider production. Aged in French oak ex-port barrels for 18 months, our barrel-aged saison pours a deep amber and emits graceful notes of marmelade, mandarin, apricot, honey and a subtle funkiness from the Brettanomyces, alongside the harmoniously balanced acidity that lingers flirtatiously on the palate.

Dark Soul Amburana

Imperial Stout

ABV: 10.0% | IBU: 60 | VOL: 650ml

Dark Soul emits an abundance of dark chocolate and coconut aromas with the Amburana radiating a beautiful cinnamon spice. The palate oozes chocolate, coffee and liquorice, with a decadent and luscious mouthfeel culminating in a gentle, smooth finish.

ABV: 11.5% | IBU: 70 | VOL: 750ml

Imperial stout aged for 36 months in bourbon barrels, pitched with a combination of brett then blended with some kettle sour base and transferred onto raspberry for secondary fermentation for 3 months.

Un4gettable

American Barleywine

ABV: 12.6% | IBU: 90 | VOL: 750ml

un4gettable is one of our final beers to be put into barrels at our former home, famous for having our brewhouse and cellar that spanned across 10 storeys. This luscious barley wine has been patiently aging in rum and bourbon barrels for over 14 months.

Brett IPA

ABV: 8.0% | IBU: 20

It’s been a long wait but it’s finally back for it’s 4th edition. In this evolving series, we have tried OYY-218 from Omega this time, it’s a house blend of pretty much every strain they have (12 and counting) giving lots of pineapple, orange peel, red apple and passion fruit. Farmhouse funkiness on the palate with a backbone of stone fruit, apricot and white wine character.

ABV: 10.5% | IBU: 68

Rich dark chocolate, coffee and dark dried fruits leading into a little chilli spice on the palate balanced with a creamy chocolate mouthfeel and lingering finish.

Love with the Coco

Lots of dark chocolate, fig and dates on aroma. On the palate lots more dark chocolate and the toasted coconut.

Minter Wonderland

Barrel aged pastry stout

ABV: 10.5% | IBU: 65

Dark chocolate, mint, bourbon and fig. Drinks like a dessert with a dark roastiness and mint chocolate leading into a sweet lingering finish.

Young Wild & 3

Barrel-aged fruited brett

ABV: 5.7%

Patiently aging for 18 months before secondary fermentation carried out on fruit. Tangerine, guava and a subtle earthy funkiness on the nose. Pineapple, stonefruit, guava and orange with an underlying oakiness balance seamlessly with the lactic and acetic acid leave a refreshing and mouth watering finish.

Dark Soul – Rum & Tonka Bean Barrel

ABV: 10.5% | IBU: 68

11 months in rum barrels and then infused with tonka beans. Gingerbread, cinnamon and vanilla dominate aroma with dark chocolate, liquorish, fig and rum on the palate. Rich and decadent.

Follow the Flow

Barrel aged sour

ABV: 6.1% | IBU: 9

Our first spontaneous release, gives a beautiful floral, lemon and melon aroma, with underlying brett character evident. This is a delicately balanced sour with lime and a subtle earthy spiciness with a lingering and refreshing acidity.

Dark Soul – Bourbon Barrel

BA imperial stout

ABV: 10.5% | IBU: 68

Chocolate, oak, vanilla and hints of coconut. Drinks super smooth with layers of dark chocolate, hazelnut, coffee and vanilla leaving a long and lingering finish.

Solo 

Barrel aged sour

ABV: 5.8% | IBU:  8

French oak with a lot of biscuit and some peach and apricot on aroma, on palate more grape and wine characters with peach with a balanced and lingering acidity.

Dark Soul – Rum Barrel

ABV: 10.5% | IBU: 68

Liquorish, dark chocolate and rum with some dark stone fruit. Rum very prominent on palate with plum and fig.

Brett IPA

ABV: 8.5% | IBU: 15

White wine, lemon and floral aroma. Some pineapple and tropical fruit on the palate balance with the acidity and a little brett funkiness.

All Funked Up  2.0

Fruited Brett

ABV: 9.0% | IBU: 25

Aroma of passionfruit, guava pineapple and citrus. On the palate the orange dominates with the brett funkiness expressing itself and balancing with a lovely lingering acitidy.

A Year to Forget

BA Imperial Stout

ABV: 9.9%

Aroma’s of dark chocolate, bourbon, vanilla, liquorish and a little cinnamon. Full bodied with a rich silky mouth feel, lots of chocolate and blueberry coming through with a little lemon zest on the finish.

Choco Rainforest 2020

BA Imperial Stout

ABV: 10.1%

On the nose chocolate, coconut vanilla and caramel which follow through to the palate where the barrel character comes through with raisin, liqourish and dark chocolate dominating.

Four of a kind

Barrel Aged Belgian Quad

ABV: 11.5% | IBU: 31

Pours a ruby brown color, phenolic character of the yeast comes through with a little spice and a subtle earthiness. Bread, toasted biscuit, fig and a little molasses and caramel from the dark candi sugar and the aging in rum barrels. Not for the weak hearted, best shared.
